Easy and tasty, a perfect recipe for a busy weeknight supper.
Quick Hoppin’ John Soup
1 lb. Jimmy Dean sage pork sausage
1 – 6 oz. box of Uncle Ben’s uncooked long grain and wild rice mix.
2 – 15 oz. cans of black-eyed peas
2 – 14 oz. cans chicken broth
2 – 14.5 oz. cans diced tomatoes
2 cups water
salt and pepper to taste
Crumble sausage and brown over medium heat.
In a large kettle, mix the sausage, rice mix with seasoning packet, black-eyed peas, tomatoes, broth, and water. Bring to a boil, reduce heat to low, cover, and simmer 20 minutes until rice is tender.
Makes 8 generous servings.
