Sour Cream Herring

Not many people care for herring, but I sure do enjoy it! I like to make this and serve it during the holidays.
I received this recipe from Gloria Danielson. I went to my very first MN Herb Society meeting and Gloria was doing the program following the meeting. She included this recipe and samples. I have come to love many of Gloria’s recipes! Submitted by Jill B.

20 oz jar herring – drain and remove spikes. Cut into bite size pieces.

2 green peppers – chopped fine
1 bunch green onions – chopped fine
1 large carton sour cream
½ cup mayonnaise
1 Tbsp celery seed
1 tsp dill weed
1 Tbsp lemon juice

Mix the last 7 ingredients together and fold in the herring.
Refrigerate overnight.
Keeps for 2-3 weeks.
