Cucumber Summer Salad
July’s recipe comes from Kelley S.
A cool, refreshing salad for a hot summer day.
Note: I usually don’t measure and go by taste so keep that in mind! Always feel free to add more or less depending on your preference.
Mix in a large bowl:
3 cucumbers peeled and chopped into small chunks
2 cups yellow cherry tomatoes cut in half
1/2 cup red onion diced
Mix in small bowl:
3 T red wine vinegar (or your favorite vinegar of choice)
3/4 C plain yogurt
Salt to taste
1/2 tsp garlic powder
Pinch of cayenne pepper powder (or to taste)
1/4 c fresh dill (or 1/2 T – 1 T dried dill)
Pour yogurt mixture over vegetable mixture. Stir till combined.
