Baked Feta Appetizer with Tomatoes and Olives

This Mediterranean inspired baked feta and tomatoes appetizer is roasted with fresh herbs and olives. Shared by Jeanie S.

Serve it alongside crackers, toasted bread, or vegetable crudités.

Ingredients

8 oz block of feta packed in water: drain and discard the water
2 cups cherry tomatoes, halved
1 tsp minced garlic
1/4 c thinly sliced red onion (or use a shallot instead)
1/4 c thinly sliced red pepper
1/3 c Kalamata olives, pitted and halved
1 1/2 T chopped parsley
1 T chopped basil
1 tsp chopped oregano (or 1/2 tsp cried oregano)
1/4 tsp pepper
1 T olive oil

Directions

Preheat oven to 400 degrees F.
Mix all ingredients, except feta, in a bowl.
Place block of feta in small rimmed oven safe baking dish.
Add tomato mixture on top of feta, letting it spill over in the dish.
Bake 20-30 minutes until vegetables are roasted and feta has softened.

Serve with crackers, toasted thinly sliced sourdough bread slices, or vegetable crudités.

Note:

Recipe can be prepared a day in advance.
Follow directions for preparing the baking dish completely.
Cover and refrigerate overnight.
Let dish sit on the counter while oven preheats.
Then bake and serve.
