So delicious, her granddaughter can’t live without it.
Hummus with Fresh Basil
3 cups cooked garbanzo beans (1cup dry)
reserve 1/4 cup liquid from garbanzo beans if needed to thin out hummus
1/3 cup olive oil
1/3 cup tahini
1/3 cup lemon juice (to taste)
2 cloves garlic, crushed
1 teaspoon salt
¼ tsp black pepper
1 tsp smoked paprika
¼ scant tsp Cayenne Pepper
1 Cup dried tomatoes
Lots of fresh basil (1/2 to 1 cup well packed)
Drain garbanzos and set aside liquid from cooking.
Combine remaining ingredients except basil in
blender or food processor. Blend for 3-5 minutes on
low until thoroughly mixed and smooth. Blend in a
little of the reserved cooking water if it is too thick.
Add basil leaves and blend until incorporated –
there should still be small fragments of leaf.
