Pineapple Sage Cookies
Our good friends at Brookside Gardens made these delightful cookies for us during our Nursery Tour in May.
This recipe was taken from “Herbs in a Minnesota Kitchen” by Bonnie Dehn & Jan Benskin
Pineapple Sage Cookies
1/2 C Butter
1/2 C Sugar
1/2 C Brown Sugar
1 Egg
1 tsp Vanilla
1 (8 oz) can crushed pineapple, drained
2 C flour
1/4 tsp baking soda
1/4 tsp salt
1 tsp baking powder
2 Tbsp finely minced pineapple sage
Cream butter & sugars. Add egg, vanilla, pineapple, and pineapple sage. Stir in sifted dry ingredients. Drop by heaping teaspoonfuls on greased cookie sheets. Bake in preheated 375 degree oven for 10-12 minutes or until lightly browned.
Note: Pineapple sage adds color and flavor to these tropical treats.
Feel free to add some nuts to the batter.
