Fancy Sauted Swiss Chard
Carlotta P. brought this delicious vegetable dish to our Holiday Party in December and we can’t stop thinking about it! She graciously agreed to share.
Ingredients:
2 teaspoons olive oil (more if needed or desired)
1 bunch Swiss Chard
1 medium red onion chopped
1 clove garlic minced
Salt and pepper to taste
2 tablespoons raisins
2 tablespoons of pine nuts or walnuts
1 – 2 teaspoons balsamic vinegar
Chevre goat cheese (optional)
Directions:
- Cut stems of Swiss chard leaves and tear up chard leaves – wash and leave water on leaves
- Chop stems
- In a large skillet heat olive oil on medium heat
- Add chard stems and onion, stirring occasionally cook for about 8 minutes
- Stir garlic, salt and pepper into chard cook for about 1 minute
- Add chard leaves and cover. Let steam for 3-5 minutes
- Stir wilted leaves into stem mixture add raisins and pine nuts
- Return cover to pan and cook (stirring occasionally) until leaves and stems are tender, about 5 minutes.
- Stir in balsamic vinegar
- Put mixture into a serving dish and dot with goat cheese if desired.
