Grilled Asparagus with Tarragon Lemon Dressing

This month’s recipe comes from Carlotta P.
Just in time for the asparagus season!

Snap ends of asparagus
Coat with 2 tsp extra virgin olive oil
Sea salt and fresh ground pepper to taste
Grill for 12-15 minutes on medium hot grill or until done to your likeness

Transfer to bowl and toss with dressing.

Tarragon Lemon Dressing

1 TBLS Lemon juice
1 Shallot, minced
1 tsp dried tarragon or 1 TBLS fresh chopped fine
¼ tsp Dijon mustard
1 tsp olive oil

Stir together, season with salt and pepper to taste.
