Anise, Grape, and Cabbage Slaw
This month’s recipe comes from Sue C. It features the anise, the flavor of the Herb of the Year, anise-hyssop.
Anise, Grape and Cabbage Slaw
1 cup unpeeled red apples
1 teaspoon fresh lemon juice
1 cup green seedless grapes, halved
2 cups medium-fine shredded green cabbage
1/4 cup finely chopped celery
3 tablespoons sour cream
1 tablespoon honey
1/4 teaspoon crushed anise seed
1/2 teaspoon salt
1/8 teaspoon pepper
Romaine lettuce
Dice apples into lemon juice to prevent discoloration. Add grapes, cabbage and celery. Combine next 5 ingredients. Add to salad.
Toss lightly.
Chill.
Serve on romaine lettuce.
Makes six servings.
