Kathy’s Garlic Scape Pesto
A great way to use garlic scapes! Can’t wait to try this recipe.
Ingredients and method:
Place following ingredients in bowl of food processor and process until nuts are finely
chopped:
1 cup olive oil
1 small lemon, juice and shredded zest
1/2 cup shelled pistachio nuts
Add:
1 pound garlic scapes, chopped into 2 inch lengths
Process until desired consistency.
Add:
1 1/4 cups shredded Parmesan cheese
1/2 teas. kosher salt
1/4 teas. freshly cracked pepper
Process until well blended.
Spoon into glass jars. Drizzle a thin layer of olive oil over pesto to prevent browning.
Store in refrigerator. May be frozen.
Can also add fresh herbs of your choice: basil, dill, thyme, etc.
Can be used to dress pasta, in soups or stews, added to salad dressings, dips, or
hummus. Use your imagination and enjoy!
