Green Tomato Spice Cake
A.K.A. Shirley’s Surprise Spice Cake

If you should end up with too many green tomatoes and frost is coming around the corner, here’s a recipe that will surprise & delight your family & friends with an interesting cake. I usually call it Surprise Spice Cake and make people guess the surprise ingredient. So far no one has guessed green tomatoes. Choose firm green tomatoes; however, I have tried it with green tomatoes that got hit with a touch of frost and the recipe still worked. The cake is best when the green tomatoes are used while still firm.
Ingredients:
4 medium firm green tomatoes, cut into small cubes, drained well
½ cup (1 stick) butter, softened
2 cups sugar
2 eggs, at room temperature
2 cups of flour
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground allspice (or ground cloves)
Directions:
- Preheat oven to 350 degrees F. Grease 2 loaf pans. Line bottom of pan with parchment paper. It will make it easier to remove cake from pan.
- In a large bowl cream butter with sugar. Add eggs and beat until creamy.
- Add flour, baking soda, salt, cinnamon, nutmeg and allspice to wet ingredients. Mix well. Fold in drained green tomatoes.
- Bake for 45-55 minutes or until a cake tester comes out clean when tested in the middle of cake.
