The Spinach That Ate Golden Valley!

I just had to share pictures of my Monster Spinach.

Planted July 29, 2020, I had thought to have it for fall. It did not do well.
With pathetic little plants not big enough to eat, I amended the soil, fertilized, still pathetic. Once the snow started, I forgot about it until Spring.

Now it is the largest leaf spinach I have ever seen at about 9 inches wide and 11 inches tall.
Tasty, too! Just a leaf or two makes a salad.
